April 2nd is National Peanut Butter and Jelly today. If you are looking for an excuse to indulge in this childhood favorite, now you have one. Enjoy.

PB&J is an iconic sandwich. It is comfort food at its finest. When I was growing up it was a staple. While I loved crunchy, it seemed that smooth was most often found in our pantry. Crunchy was a favorite to use on bread when it was hot out of the toaster for both texture and flavor. Speaking of texture, I had a friend who put potato chips in her PB&J. It was culinary genius at that time of our lives.

However, there are so many more things you can do with this spreadable combo than slap it between two pieces of bread. I found lots of them on my social media feeds this week. Some recipes were as easy as people taking freshly baked berry pies and placing dollops of peanut butter around the crust. The ones I gathered are a little more sophisticated.

    Why have regular cookies when you can stuff them? You have to freeze small scoops of peanut butter for the center. I can just taste these hot out of the oven with a glass of milk. And I don’t even like milk.
