On the rooftop of The Perry Hotel Naples, Chef Dale Talde launches Tigress, bringing together Cantonese cooking with classic steakhouse fare. The new restaurant sits on top of the upcoming 160-room hotel in Florida.
“I'm thrilled to be back in Florida and to introduce myself to the enthusiastic culinary scene in Naples,” Talde told FSR Magazine. “Tigress will be a Cantonese-inspired chophouse that fuses my signature style with a deep love for steak. Both locals and hotel guests can look forward to creative ingredients and global inspirations from my culinary journey.”
His creative menu combines American steakhouse classics with Asian flavors. Diners can enjoy mala-spiced lamb and dry-aged beef wrapped in soft dough. Every cut of meat comes with fresh lettuce wraps and four unique sauces — ranging from spicy Thai crying tiger to creamy gochujang butter. The kitchen serves up hot bowls of fried rice and savory mushroom noodles. Popular dishes include crown of duck and glazed char siu pork belly.
Next door, drink expert Lynnette Marrero crafts unique cocktails at Easy Tiger, where the Tigress-Tini and Hong Kong Old-Fashioned are crowd favorites.
“Each drink is designed to elevate and complement the vibrant flavors of his dishes, using bold, dynamic, and layered with flavors that surprise and delight," Marrero told Restaurant Hospitality.
In New York, Talde runs Goosefeather in Tarrytown and serves travelers at Talde Noodle Bar at LaGuardia Airport. His cooking journey started in his mom's Chicago kitchen, where he learned the fundamentals.
